Foodie Friday : Turkey Meatballs

Pasta and meatballs is one of my all-time favorite meals, and I will always make those meatballs with ground beef, but in the last year or so I have discovered that turkey meatballs are also quite tasty. I find that they go well with rice or mashed potatoes. Unlike my beef meatballs, which cook for about 2 hours in a pot full of marinara sauce, I like my turkey meatballs cooked mostly dry in a skillet—it takes much less time and I like the harder outside on turkey meatballs (but can’t stand it on beef meatballs 🤷🏻‍♀️).

After forming the meatballs, place them in a single layer at the bottom of a large skillet. Cover and cook, stirring occasionally. When the outsides begin to brown, remove the lid and add the mustard & soy sauce. Stir well and continue cooking until all liquid is gone.*

*The amount of liquid will depend on the fat content of your ground turkey. Leaner meat will cook faster, fattier meat will leak a lot of moisture that will need to be cooked off.
