Foodie Friday : Banana Bread

This banana bread recipe is super simple and delicious! Sometimes (often) I let my bananas get overripe on purpose so that I can make them into banana bread.

Step 1 : Preheat oven to 350 degrees.

Step 2 :

Melt the butter in a large glass mixing bowl in the microwave.

Step 3 : Mix in the remaining ingredients, in the order listed. For a more bread-like texture, mix until just barely combined. For a more cake-like texture, mix very well.

Step 4 : Divide the batter into 2, 9x5 bread pans for shorter loaves (shorter cooking time), or 1, 9x5 pan for a taller loaf (longer cooking time).

I use silicone ones and LOVE them.

Step 5 : Bake in a pre-heated oven at 350 degrees for 20-35 minutes depending on how deep your loaves are.

Feel free to use different mix-ins for your banana bread! Mini chocolate chips are definitely my favorite, but cranberries also go well in banana bread. Or try different flavors of baking chips. The sky’s the limit? Maybe?
