Foodie Friday : Peach Muffins

These muffins are perfect for breakfast on the go or for a mid-morning snack. We love peaches in this house but somehow they still end up getting too ripe to eat sometimes. The peaches I used for these muffins were definitely super juicy and would have been pretty messy to try to eat!

Chop the peaches into small pieces. Then mix the ingredients together in the order shown. Start with just 2 cups of the all purpose flour, and add more if the batter looks really wet after you add the peaches.

I use silicone muffin cups found on Amazon. Muffin papers would work just fine if you prefer.

*My original recipe called for 2 cups of all purpose flour and no oats, but my peaches were pretty juicy so I added an extra 1/4 cup of flour and the oats to help soak up the extra juice.

Makes approximately 21 muffins.
