Foodie Friday : Whole Wheat Pancakes

Pancakes are probably my all-time favorite breakfast food, but I’m also pretty picky about my pancakes. A lot of people like big fluffy white pancakes, but I’m really not a fan. I like thinner pancakes, and I also think I actually prefer the taste of whole wheat pancakes at this point! I used to buy Bisquick and I liked those pancakes pretty well, but then I discovered a recipe for whole wheat pancakes from * Cooking Comically. * (Disclaimer…if you don’t like language please don’t click the link 😬)

I made slight adaptations to the recipe, and have been eating these pancakes for years now. In fact, there were a few years when I ate pancakes for breakfast every. single. morning. (Until I decided pancakes took too long and I needed a break…that’s when I switched to Quick Oats.

Mix all ingredients together in a large jar or storage container.

When it’s time to make pancakes, mix 1 egg, 1/2 cup of milk, 2 tbsp milled flax seed, and 1/2 c pancake mix. Makes 4, 5 inch pancakes. When cooking breakfast for multiple people, I would go up to 1 cup each of milk and pancake mix per egg & flax seed.

What do you like on your pancakes? My favorites are peanut butter, blueberries, mini chocolate chips, and syrup. Sometimes I substitute black raspberry preserves for the syrup and call it a PB & J pancake!
