Recipe : Pork & Potatoes

This is a super simple meal to throw together that can feed 2 people all week long!

Suggested serving size shown in a sandwich container.

Potatoes : Peel 4-5 lbs russet potatoes, boil them until a fork easily slides through, then mash with 4 tbsp butter, 2 oz cream cheese, milk (to desired consistency), garlic powder and salt to taste. 

Pork : Cook a 4-5 lb pork loin in the crockpot with 1 can of beer, 1-2 cups of apple cider,  and about 1 cup of barbecue sauce. Cook on low for 6+ hours until internal temperature reaches at least 190.  Pork is safe to eat when internal temp reaches 145, but it will be more tender/easier to pull if the temp reaches 200.  (You can also cook the pork with just a cup of liquid such as chicken broth, and then add bbq sauce to taste after you pull the pork.)

Beans : Clean/snap 2 lbs green beans, toss with olive oil, garlic powder, and salt.  Preheat the oven to 425 degrees. Spread the beans out on a large baking sheet and roast for 15 minutes.
