Foodie Friday : Zucchini Tots

A friend recently brought me some enormous zucchinis from her garden. I love sautéed zucchini, but you can only eat so much of the same thing, and with the amount of zucchini I now have sitting on my kitchen counter, I wanted to try something new! So I turned to the ever-trusty Google, typed in “creative zucchini recipes,” and Voila! I immediately encountered this recipe from Skinnytaste. I am generally incapable of actually following a recipe to the letter, so of course I adapted it to make it my own.

Step 1 : Preheat the oven to 400 degrees.

Step 2 : Grate the zucchini into a clean dish towel and then squeeze out as much water as possible.

Step 3 : Dice the onion, mince the ginger, and mix all the ingredients together.

Step 4 : Shape the mixture into little balls and spread them out on a greased baking sheet. (I got 15 or 16)

Step 5 : Bake for 16 minutes, flipping them over halfway through.
